Kind of a Muesli-Apple muffin cake, w/ baking soda. I came up with it by combining three cake/ muffin recipes.
I call it Coffee-cake because it goes well with coffee or tea..
1. Combine all dry ingredients in large mixing bowl: -One cup (250 cc.) each – white flour, whole wheat flour & muesli/ granola of choice -One tablespoon (TBS) cinnamon -One teaspoon (TSP) nutmeg -Four TBS cane sugar or sweetener of choice -One TSP baking soda -Pinch of salt -Handful of almonds, walnuts or other nuts of choice — toasted is nice!
2. Stir all wet ingredients in another bowl: -Two eggs, beaten, w/ pinch of salt -One cup yogurt or buttermilk (ie., something slightly acidic to react w/ baking soda) -One cup milk, soy-milk, or other milk of choice -Two TBS oil, neutral-tasting salad oil is best (ie., NOT sesame or olive oil) -One apple or other fruit, diced into small chunks
3. Combine all. Final texture should be thick & gooey – but not runny. 4. Pour onto cooking sheet pan, 9” x 12”, or 20 x 30 cm. 5. Bake at 200º C. for 25 min. or so, til inside is baked.
